大型真菌中不少种类在食用和药用上是很有价值的。例如蘑菇、草菇、猴头、木耳、银耳、茯苓、灵芝等等。很久以来食用和药用的部分都是它们的子实体部分。子实体是由菌丝形成的,具有比较复杂的组织结构。菌丝的生长一般不要求很严格的条件,而子实体的形成和发育却要求比较严格的营养条件和环境条件,这样就增加了培养子实体的麻烦。例如培养蘑菇和灵芝子实体,从准备营养基物起直到管理和采收都比较费力、费时间。如果培养它们的菌丝体直接可以供食用或药用,那就方便得多了。
