为了分析不同提取温度对桔梗多糖提取率及抗氧化性的影响,试验以桔梗为材料,采用热水浸提法提取多糖,以提取率、总还原能力和清除羟自由基的能力为指标分析其抗氧化性。结果表明:50℃时桔梗多糖的提取率最高,为35.82%,提取率大小依次为50℃>40℃>60℃>30℃>20℃,与40℃的提取率相比差异不显著(P>0.05),与60℃的提取率相比差异显著(P<0.05),与20℃、30℃的提取率相比差异极显著(P<0.01)。总还原能力由强到弱依次为30℃>40℃>50℃>60℃>20℃;羟自由基清除能力由强到弱依次为50℃>30℃>40℃>20℃>60℃,总还原能力和清除羟自由基能力最优值与其他各个温度比较差异不显著(P>0.05)。说明以40℃为提取温度较为适宜。多糖是由单糖通过糖苷键聚合成的高分子碳水
In order to analyze the effect of different extraction temperature on the extraction rate and antioxidation of Campanulaceae polysaccharide, the experiment was used to extract Campanulaceae as the material, and the polysaccharide was extracted by hot water extraction. The extraction rate, total reducing ability and hydroxyl radical scavenging ability were analyzed as indexes Antioxidant. The results showed that the extraction rate of polysaccharides from Platycodon grandiflorum was the highest (35.82%) at 50 ℃, and the extraction rate was 50 ℃> 40 ℃> 60 ℃> 30 ℃> 20 ℃, and the difference was not significant > 0.05), which was significantly different from that at 60 ℃ (P <0.05), which was significantly different from that at 20 ℃ and 30 ℃ (P <0.01). The results showed that the total reducing ability was from strong to weak in the order of 30 ℃> 40 ℃> 50 ℃> 60 ℃> 20 ℃. The hydroxyl radical scavenging ability from strong to weak was 50 ℃> 30 ℃> 40 ℃> 20 ℃> 60 ℃, The best of total reducing ability and hydroxyl free radical scavenging ability were not significantly different from other temperatures (P> 0.05).
