目的分析岑溪市食品致病菌污染状况及食源性疾病的发生。方法 2010~2011年选择本市有代表性的农贸市场、食品超市和快餐店随机采集10个种类食品,按照国标方法进行菌落总数、大肠菌群、致病菌等项目的检测。结果采集的10类食品共146份样品,总超标率为29.45%,未检出致病菌。岑溪市10类食品均受到不同程度的微生物污染,主要是菌落总数和大肠菌群超标,超标率分别是23.97%和28.77%,超标食品主要为鲜榨果汁、其次是即食非发酵豆制品、凉拌菜及熟肉制品,结论应采取相应的预防和控制措施,加强对各类食品的监督监测,防止食源性疾病的蔓延。
Objective To analyze the status of foodborne pathogens and foodborne diseases in Cenxi City. Methods From 2010 to 2011, 10 representative food markets were selected in this Municipality. Ten food products were randomly collected from food supermarkets and fast food restaurants. The total number of colony, coliforms and pathogens were detected according to the national standard method. Results A total of 146 samples of 10 kinds of food were collected, with a total exceeding standard rate of 29.45%. No pathogenic bacteria were detected. Cenxi City, 10 kinds of food are subject to varying degrees of microbial contamination, mainly the total number of colonies and coliform bacteria exceeded, exceeding the rate of 23.97% and 28.77% respectively, excessive food mainly fresh fruit juice, followed by instant non-fermented soybean products, cold Vegetables and cooked meat products, the conclusion should be taken to prevent and control measures to strengthen the supervision and monitoring of various types of food to prevent the spread of foodborne diseases.
