[目的]了解新乡市全脂巴氏杀菌乳和灭菌乳的营养卫生状况。[方法]分别抽取本埠、外埠巴氏杀菌乳和灭菌乳进行微生物、理化指标检测,对比分析。[结果]总合格率73.2%,巴氏杀菌乳合格率63.83%,灭菌乳合格率82.00%;巴氏杀菌乳微生物合格率85.11%,灭菌乳微生物合格率98.00%;巴氏杀菌乳理化合格率65.96%,灭菌乳理化合格率84.00%。[结论]巴氏杀菌乳合格率低于灭菌乳,巴氏杀菌乳微生物、理化指标不合格现象都比较严重,灭菌乳主要是理化指标不合格。
[Objective] To understand the nutritional status of whole-paste pasteurized milk and sterilized milk in Xinxiang City. [Method] The local and external port pasteurized milk and sterilized milk were respectively taken for the detection of microorganisms and physicochemical indexes and comparative analysis. [Result] The total qualified rate was 73.2%, the passing rate of pasteurized milk was 63.83%, the qualified rate of sterilized milk was 82.00%; the pass rate of pasteurized milk was 85.11%, the passing rate of sterilized milk was 98.00%; pasteurization emulsified The pass rate of 65.96%, sterilized milk pass rate of 84.00%. [Conclusion] The pass rate of pasteurized milk was lower than that of pasteurized milk and pasteurized milk. The unqualified physical and chemical indexes were all serious. The sterilized milk was mainly unqualified for physical and chemical indexes.
