通过研究分析华南地区种植籼稻米的长度和长宽比指标,参照国际食品法典标准(CAC)的大米分类和判定标准(CODEX STAN 198-1995)得出以下结论:建议将华南地区籼米粒型分为长粒米、中粒米和短粒米,判定方法采用长度和长宽比综合判定分类,其中长粒米长度≥6.8 mm,长宽比≥3.4;中粒米长度>6.0 mm且<6.8 mm,长宽比≥3.0且<3.4;短粒米长度≤6.0 mm,长宽比<3.0。分析研究了不同粒型籼米的米粒长度、长宽比、直链淀粉和垩白度指标之间的关系,得出通过判定籼米粒型可快速判定该批大米品质的好坏。
By studying the length and aspect ratio indexes of indica rice planted in southern China, the following conclusions were drawn with reference to the classification and determination criteria of rice (CODEX STAN 198-1995) of the Codex Alimentarius (CAC): It is suggested that the indica rice grain type in South China For long-grain rice, medium-grain rice and short-grain rice, the determination method was based on comprehensive judgment of length and aspect ratio, in which the length of long grain rice≥6.8 mm, the aspect ratio≥3.4; the length of medium grain rice> 6.0 mm and <6.8 mm, aspect ratio ≥3.0 and <3.4; short grain rice length ≤6.0 mm, aspect ratio <3.0. The relationship between grain length, aspect ratio, amylose content and chalkiness index of indica rice with different particle size was analyzed. It was concluded that the qualities of the batch of rice could be quickly determined by judging indica rice grain type.
