目的了解南京市2006-2008年9类食品的污染状况,建立“南京市食品污染物监测体系”。方法生肉、水产品、生食蔬菜、熟肉制品、蔬菜色拉、速冻米面制品(生、熟)、非发酵豆制品、生奶与奶酪等9类食品,共计312份,按照GB/T4789-2003进行6种食源性致病菌(沙门菌、金黄色葡萄球菌、副溶血性弧菌、单核细胞增生李斯特菌、大肠埃希菌O157:H7和空肠弯曲菌)检测。菌株鉴定应用ATB细菌鉴定仪。结果单核细胞增生李斯特菌在2006-2008年总检出率分别为15.7%、15.7%和16.9%;沙门菌总检出率分别为4.3%、3.6%和2.2%;副溶血性弧菌总检出率分别为3.6%、1.2%和2.2%;金黄色葡萄球菌总检出率分别为1.4%、3.6%和0。而O157:H7大肠埃希菌和空肠弯曲菌未检出。结论2006-2008年单核细胞增生李斯特菌在6种致病菌中检出率最高达到15%以上,属高危致病菌;沙门菌、副溶血性弧菌、金黄色葡萄球菌检出率相对较低,但不排除它们在高危食品中引起食物中毒的潜在危险。因此对这4种致病菌污染的高危食品应引起足够重视,加强监控。
Objective To understand the pollution status of nine kinds of food in Nanjing from 2006 to 2008 and establish the Nanjing Food Contaminant Monitoring System. Methods A total of 312 food products including raw meat, aquatic products, raw vegetables, cooked meat products, vegetable salads, quick-frozen rice products (raw and cooked), non-fermented soybean products, raw milk and cheese were prepared according to GB / T4789-2003 Six food-borne pathogens (Salmonella, Staphylococcus aureus, Vibrio parahaemolyticus, Listeria monocytogenes, Escherichia coli O157: H7 and Campylobacter jejuni) were tested. Strain identification using ATB bacteria identification instrument. Results The total detection rates of Listeria monocytogenes in 2006-2008 were 15.7%, 15.7% and 16.9% respectively. The total detection rates of Salmonella were 4.3%, 3.6% and 2.2% respectively. Vibrio parahaemolyticus The overall detection rates were 3.6%, 1.2% and 2.2%, respectively. The total detection rates of Staphylococcus aureus were 1.4%, 3.6% and 0% respectively. However, O157: H7 Escherichia coli and Campylobacter jejuni were not detected. Conclusions The detection rate of Listeria monocytogenes from 2006 to 2008 is higher than 15% among the six pathogens. The detection rate of Salmonella, Vibrio parahaemolyticus and Staphylococcus aureus Is relatively low, but does not rule out the potential dangers they cause food poisoning in high-risk foods. Therefore, high-risk food contaminated by these four kinds of pathogenic bacteria should be given enough attention to strengthen the monitoring.
