衡量高粱籽粒品质优劣的主要依据是高蛋白质、高赖氨酸和低单宁。蛋白质是由氨基酸所组成,它是人体主要营养物质,赖氨酸含量高的,其蛋白质的消化和吸收率也高。而单宁不仅影响适口性、它还会破坏蛋白质,降低其营养价值。继1979年《东北三省高粱品质分析》发表之后,1979年又对华北、华东、中南、西南、西北等21个省区的高粱品种资源中代表品种的品质性状做了分析研究,供育种工作者参考。一、材料来源与分析方法1.种子来源:为21个省区的代表品种。是1977年从原产地征集的,1979年由我院中心
