目的:探析细菌性食物中毒的微生物检验结果。方法:择取2016年4月至2017年4月122起细菌性食物中毒事件进行研究,检验中毒人员所食用的食品、呕吐物或粪便;手试子检验食品销售人员与厨师的手部情况;采集检验食品操作间。结果:经过一系列检验,发现副溶血性弧菌、大肠杆菌、沙门氏菌、金黄色葡萄球菌、变形杆菌、志贺菌、蜡样芽孢杆菌以及不详因素均为致病菌。在取样检验中,粪便是检查细菌最多的样本,肛试子其次,另外呕吐物、手试子、食品以及厨具的细菌数目较少。结论:对细菌性食物中毒事件行以微生物检验可以确定菌种、菌属、血清类型,进而确定污染源,为细菌性食物中毒的治疗和干预提供参考,利于病因的控制。
Objective: To analyze the results of microbial test of bacterial food poisoning. Methods: From April 2016 to April 2017, 122 cases of bacterial food poisoning were selected to test food, vomit or stool eaten by poisoned persons; hands were used to test the hand of food salesman and chef; Collection and inspection of food operation room. Results: After a series of tests, Vibrio parahaemolyticus, Escherichia coli, Salmonella, Staphylococcus aureus, Proteus, Shigella, Bacillus cereus and unknown factors were all found to be pathogens. In sample testing, faeces are the most frequently tested sample of bacteria. In the second place, the number of bacteria in the vomit, hand test, food and kitchenware is less. Conclusion: The bacterial species, bacteria and serotypes can be identified by microbial test for bacterial food poisoning, and then the sources of contamination can be determined. It can provide references for the treatment and intervention of bacterial food poisoning, which is beneficial to the etiological control.
