目的了解平顶山市过氧化苯甲酰、铅、镉、含铝添加剂、亚硝酸盐等化学物质对部分食品的污染状况,为采取有针对性的控制措施提供科学依据。方法根据当地经济和消费情况选择平顶山市具有代表性的3个区和5个县作为监测点,从每个监测点的各类超市、农贸市场采集食品样品,按理化工作手册的相关检验方法进行有害元素和食品添加剂的检测分析。结果共监测5类食品628份样品,合格529份,合格率84.24%;超标99份,超标率15.76%。其中油炸食品超标率最高,为71.76%;其次分别为熟肉制品、面与面制品、大米、蛋与蛋制品,超标率分别为17.22%、6.52%、3.33%、0.67%。市区和县区分别监测样品314份,市区超标样品52份,超标率16.56%;县区超标样品47份,超标率14.97%,两者之间差异无统计学意义(χ2=0.3,P=0.584)。结论油炸食品和熟肉制品污染较为严重,要从源头和日常生活中防制食品添加剂污染,加大监督监测和检查力度,防止食品污染及食物中毒的发生。
Objective To understand the pollution status of some foodstuffs such as benzoyl peroxide, lead, cadmium, aluminum-containing additives and nitrite in Pingdingshan City, so as to provide scientific basis for taking targeted control measures. Methods According to the local economy and consumption, 3 representative districts and 5 counties in Pingdingshan were chosen as the monitoring points. Food samples were collected from all kinds of supermarkets and farmers markets at each monitoring site according to the relevant test methods of the physical and chemical workbooks Detection and Analysis of Harmful Elements and Food Additives. Results A total of 628 samples of 5 kinds of food were monitored, 529 were qualified, with a passing rate of 84.24%; 99 exceeded the standard, and the exceeding standard rate was 15.76%. The highest rate of over-standard fried foods was 71.76%, followed by cooked meat products, flour and noodle products, rice, egg and egg products respectively. The over-standard rates were 17.22%, 6.52%, 3.33% and 0.67% respectively. In the urban area and the county area, 314 samples were monitored, 52 samples exceeded the standard in urban area, and the exceeding standard rate was 16.56%. 47 samples exceeded the standard in the counties and the exceeding standard rate was 14.97%. There was no significant difference between them (χ2 = 0.3, P = 0.584). Conclusion Deep-fried food and cooked meat products are more polluted. From the source and daily life, we should control the contamination of food additives, increase supervision, inspection and inspection to prevent food contamination and food poisoning.
