剑麻巯基蛋白酶是新发现的一种植物蛋白水解酶。它在剑麻中含量相当高。初步试验表明,该酶在皮革脱毛、蛋白水解物的制备等方面都具有实用意义。另一方面,Tipton及Du Toit曾经报导过西沙尔种剑麻(Agave sisalanus)及同科植物番麻(Agave americana variegata)中的蛋白水解酶分别为金属蛋白酶及丝氨酸羟基蛋白酶,而我们从东一号种剑麻(Agave hybrid,№11648)得到的蛋白酶粗制剂,表现为巯基蛋白酶性质。为了进一步研究该酶性质,曾应用阴离子及阳离子纤维素对该酶进行分离纯化,但过程中常发生自解作用。本文应用带有有机汞配基的琼脂糖凝胶柱进行亲和层析,
