小麦品质包括营养品质和加工品质两个基本内容,而加工品质又包括磨粉品质和食品加工品质。为了给育种者提供信息,为农业、食品加工业更好地利用现有品种提供科学依据,1984、1985连续两年对我省主要推广小麦品种的营养品质及加工品质进行了分析。营养品质中其蛋白质含量由湖北省农科院测试中心用GQA—31型谷物品质分析仪测定,加工品质由武汉粮食工业学院用西德Brabender公司出产的全套仪器测定。样品来源主要由小麦省区试点提供,选材以地区分布种植面积最大的品种,
