特许经营需要严格的标准和操作规范做支撑,这似乎与中餐,特别是中餐正餐的特点相悖。相反,是不是中餐就不能搞特许经营呢?百年老店全聚德的董事长兼总经理姜俊贤通过几年的实践经验体会到,将中餐的共性与个性相结合,兼顾消费者的目标性与选择性,或许是发展中餐特许经营的模式。
Franchising requires strict standards and operating practices to support it, which seems to be contrary to the characteristics of Chinese food, especially Chinese dinner. On the contrary, can it not be franchising when it is not Chinese food? The chairman and general manager Jiang Junxian of the 100-year-old Quanjude realized through years of practical experience that it combines the commonness and personality of Chinese cuisine, taking into account the target and selectivity of consumers. Perhaps it is the mode of developing Chinese franchising.
