前言 本世纪四十年代中期以来,日本由于化学工业的迅速发展,它不仅使农业生产发生了巨大的变革,在食品工业方面也发生了很大变化。还由于各种食品加工技术的进步,以及长期贮存和远距离运输等技术问题都已得到解决,从而使城乡的居民全都能享受到丰盛的商品化加工食品。如此丰盛饮食生活的取得,显然与应用了多种化学产品有直接关系。然而,在获得了丰盛饮食生活的同时,也出现了化学物质所带来的危害作用。所以,关于现代食品的安全性问题,就迫使人们必须给予足够重视。日本从本世纪五十年代发生的水俣病(1953—1956)和森永奶粉砷中毒事件(1955)开始,已经多次发生各种所谓食品公害的事件。
Preface Since the mid-1940s of the 20th century, due to the rapid development of the chemical industry in Japan, Japan has not only made great changes in agricultural production but also has made great changes in the food industry. Technical issues such as the advancement of various food processing technologies and the long-term storage and long-distance transport have also been solved, enabling all urban and rural residents to enjoy rich, commercially processed foods. Obtaining such a rich dietary life is obviously directly related to the application of a wide range of chemical products. However, while gaining a rich dietary life, the harmful effects of chemical substances have also appeared. So, the question of the safety of modern food forces people to pay enough attention. Since the Minamata Disease (1953-1956) and Morinaga Milk Arsenic Poisoning (1955) that occurred in Japan in the 1950s, various so-called food poisoning incidents have taken place many times.
