花椒是我国西南地区长期食用的香辛料之一,具有较高的食用和保健价值。研究显示,花椒成分多样,各成分在抗氧化、减肥、降血糖、血脂、血压等保健方面具有一定的功效,具有较好的应用价值和研发潜力。尤其是近几年的研究,在花椒减肥、调节肠道菌群等方面又有新发现。本文将从成分功能相关性、研究方法及总结展望的角度,以陈述结合列表的形式,对花椒的主要成分及抗氧化、减肥、降血脂、调节肠道菌群等主要保健功效进行综述,旨在为后续研究积累资料,同时促进花椒的开发利用。
