目的:研究花椒黄酮类成分与外观颜色相关性,为花椒品质评价提供参考。方法:引入色度空间系统CIE L*,a*,b*对花椒药材粉末颜色进行客观量化,以总黄酮及黄酮类成分芦丁、金丝桃苷、槲皮素、橙皮苷为指标,研究其与颜色值的相关性。结果:花椒的总黄酮、芦丁、槲皮素含量与L*,a*显著正相关(P<0.05),而总黄酮、芦丁与b*无显著相关性,金丝桃苷、槲皮素的含量与颜色值b*显著正相关(P<0.05);青椒橙皮苷的含量与L*,a*,b*显著负相关(P<0.05)。结论:花椒颜色值与总黄酮、芦丁、金丝桃苷、槲皮素、橙皮苷含量存在一定的相关性。
OBJECTIVE: To study the correlation between flavonoids and color of Zanthoxylum bungeanum and to provide reference for the quality evaluation of Zanthoxylum bungeanum. Methods: CIE L *, a *, b * was introduced into the chromatic space system to objectively quantify the powder color of Chinese medicinal herbs. With the total flavonoids and flavonoids rutin, hyperoside, quercetin and hesperidin as indexes, Investigate its relevance to color values. Results: The contents of total flavonoids, rutin and quercetin in Zanthoxylum bungeanum had a significant positive correlation with L *, a * (P <0.05), while the total flavonoids and rutin had no significant correlation with b *. Hyperin, quercetin (P <0.05). The content of hesperidin in green peppers was negatively correlated with L *, a *, b * (P <0.05). Conclusion: The color value of Chinese prickly ash has a certain correlation with the contents of total flavonoids, rutin, hyperoside, quercetin and hesperidin.
