顺德菜属于我国八大菜系之一的粤菜,有着悠久的历史和丰富的内涵。顺德菜是粤菜首屈一指的代表,在全国、甚至海外华人圈中,顺德菜都享有盛名。俗语“食在广东,厨出凤城”道出了顺德菜在“食客”心目中的地位。顺德菜长期受海外文化的影响和滋润,看重传承,又不固于传统,在统一中显出灵活、清新,是我国饮食体系中最富于改革和创新的代表。历史的传承和时代的进步赋予了顺德菜诸多的特点,如用料广泛而丰富、用量精而细、配料多而巧、装饰美而艳、菜质讲究色、香、味,型,且以味鲜为主体、注重食用安全等。
