以河北藁城产黄金梨为试材,研究了气调贮藏期内果实硬度、Vc、多酚、丙二醛(MDA)、多酚氧化酶(PPO)和抗坏血酸-过氧化物酶(AsA-POD)活性的变化及其相关性。结果表明:黄金梨果实硬度和Vc含量在气调贮藏期间不断下降;多酚和MDA含量不断上升;AsA-POD活性在贮藏初期升高很快,贮藏后期下降;PPO活性呈先降低后升高的总体变化;果实多酚含量同PPO活性呈现正相关性(r=0.859),硬度和AsA-POD活性分别与MDA含量、Vc含量呈现负相关性(r=-0.969、r=-0.948);3%~5%的低O2气调配合0℃低温贮藏能显著抑制黄金梨的衰老进程。
The effects of Vc, polyphenol, malondialdehyde (MDA), polyphenol oxidase (PPO) and AsA- POD activity and its correlation. The results showed that the hardness and the Vc content of the plum decreased continuously during the time of atmosphere storage, while the contents of polyphenols and MDA increased continuously. The activity of AsA-POD increased rapidly in the early storage and decreased in the later storage. The PPO activity decreased first and then increased (R = 0.859). The hardness and AsA-POD activity were negatively correlated with MDA content and Vc content (r = -0.969, r = -0.948), respectively. 3% ~ 5% low O2 gas conditioning combined with 0 ℃ low temperature storage can significantly inhibit the aging process of the golden pear.
