饮食服务业卫生状况评价是预防疾病,加强食品卫生监督的重要内容之一。本文通过对长春市饮食服务业抽样调查,采用模糊综合评判法对小吃、酒店类饮食服务业进行科学考评,避免过去运用指标分析和经验带来的人为影响,从定性分析逐步达到定量评价。调查结果显示:长春市饮食服务业市区好于郊区,酒店业总体水平明显高于小吃类。表明饮食服务业食品卫生监督重点是加强小吃类的管理及人员的培训。
The assessment of health conditions in the catering service industry is one of the important contents of preventing diseases and strengthening food hygiene supervision. In this paper, a sample survey of food service industry in Changchun is carried out. The fuzzy comprehensive evaluation method is adopted to conduct a scientific evaluation of snacks and hotel catering services. It avoids the human influence caused by the past application of index analysis and experience, and gradually reaches the quantitative evaluation from the qualitative analysis. Survey results show that: Changchun City, catering services in urban areas better than the suburbs, the overall level of the hotel industry was significantly higher than snacks. It shows that the focus of food hygiene supervision in the catering service is to strengthen the management of snacks and training of personnel.
