实验研究了鲤鱼在静磁场中的冷冻过程,所有样本质量为600~800 g,腹部最厚处的尺寸为46~52 mm。冷冻过程在速冻冷库中进行,冷冻方式为鼓风式冷冻,冷库温度设定为-35℃。施加的磁场强度分别为0 G、3.6 G、7.2 G、10.8 G,测量并连续记录冷冻过程中样本表面和热中心的温度。实验结果表明,磁场对鲤鱼不同冷冻阶段的影响规律不同。磁场对鲤鱼冷却阶段的影响较小,对相变阶段有着明显的促进作用,对冻结阶段有延缓作用。
The freezing process of carp in static magnetic field was experimentally studied. The mass of all samples was 600-800 g and the thickness of the thickest part of the abdomen was 46-52 mm. The freezing process is carried out in a quick-freezing cold storage room. The freezing method is blast-type freezing, and the freezing temperature is set to -35 ° C. The applied magnetic field strengths were 0 G, 3.6 G, 7.2 G and 10.8 G respectively. The temperature of the sample surface and the thermal center during freezing was measured and continuously recorded. The experimental results show that the magnetic field has different influence on the different freezing stages of carps. The effect of magnetic field on the cooling stage of the common carp is small, which has a significant promoting effect on the phase of phase transformation and a delaying effect on the freezing stage.
