皮蛋又名松花(因成品去壳后有松针形花纹故名)、彩蛋(皮蛋切开后蛋黄呈现不同色层,五彩缤纷,彩蛋即由此得名)、变蛋。是我国传统特产,为我国人民喜爱的副食品之一。全国各地均有生产。因加工用料配方及加工条件不同,分硬心(俗称湖彩)和软心(俗称京彩、汤心、糖心)两大类。硬心皮蛋多产自南方;北方多为软心皮蛋。
