魔芋葡甘聚糖(KGM)是一种具有特殊结构和功能的天然多糖,广泛应用于食品、化工、生物、医药等领域。KGM在魔芋球茎中的晶体成长对其形成特殊结构与功能具有十分重要的关系。本文综述了国内外生物高分子晶体结晶研究的现状,在总结和分析传统方法的优劣基础上,分析了生物高分子晶体结晶的研究存在的问题,并提出解决目前存在问题的办法,对魔芋葡甘聚糖微观构象与其晶体天然成核关系的探究提供了新的思路和方法。
Konjac Glucomannan (KGM) is a kind of natural polysaccharide with special structure and function. It is widely used in food, chemical industry, biology, medicine and other fields. KGM konjac bulbs in the crystal growth of its special structure and function of a very important relationship. This review summarizes the research status of biopolymer crystals at home and abroad. Based on the analysis of the advantages and disadvantages of the traditional methods, the problems existing in the research of biopolymer crystals are analyzed, and the solutions to the existing problems are proposed. It provides new ideas and methods to explore the relationship between the micro-conformation of glucomannan and its natural nucleation.
