1 甜味剂的使用概况2002年美国玉米用于深加工为555亿磅(每磅合0.4536kg),391亿磅是用于淀粉和甜味剂,其中甜味剂(高果糖浆)份额最大,为242亿磅。据国际LMC估计:甜味剂的需求将以每年21%的速度增长。而不同地区增长率分别为:亚洲38%,欧洲22%,北美19%。甜味剂在食品中的许多应用很难被取代,所以用量的增长有赖于食品应用范畴的扩大。甜味剂的大量消费,尤其在饮料中的使用是发展最快的部分之一,正受到管理及消费者的密切关注,其中高果糖浆是主要的营养性甜味剂。
1 Overview of the Use of Sweeteners In 2002, the U.S. corn used for deep processing was 55.5 billion pounds (0.4536 kg per pound), 39.1 billion pounds was used for starch and sweeteners, with the largest share of sweetener (high fructose syrup) 24.2 billion pounds. According to international LMC estimates: the demand for sweeteners will grow 21% per year. The growth rates in different regions are: 38% in Asia, 22% in Europe and 19% in North America. Many applications of sweeteners in food are difficult to replace, so the increase in dosage depends on the expansion of food applications. Massive consumption of sweeteners, especially in beverages, is one of the fastest growing segments and is being watched closely by management and consumers, with high fructose syrup being the main nutritional sweetener.
