近年来国际上接连不断地发生食品中毒事件,食品的卫生安全问题引起了全世界的关注。随着我国人民生活质量的提高和我国加入WTO,食品的安全问题已引起了我国民众的普遍关注。在食品的加工、贮藏过程中,如果操作方式不当,可能会引起致病菌的污染和繁殖导致食物中毒事件频繁发生。另外,有些在食品加工、烹调过程中出现的化学物,如苯并芘、杂环胺、氯丙醇等污染食品问题,也引起了世界各国的普遍重视。本文着重对贮藏、加工和烹调等方面引起的食品安全问题进行探讨。
In recent years, there have been many food poisoning incidents in the world. The health and safety of food has aroused the world’s attention. With the improvement of people’s life quality in our country and China’s accession to the WTO, the safety of food has caused widespread public concern in our country. In the process of food processing and storage, improper operation may lead to frequent contamination and multiplication of pathogenic bacteria leading to food poisoning incidents. In addition, some food contaminants, such as benzopyrene, heterocyclic amines and chloropropanols, which are present in food processing and cooking processes have also attracted the attention of all countries in the world. This article focuses on the storage, processing and cooking aspects of food safety issues are discussed.
