阜阳市2013年食品安全风险监测结果分析

目的分析2013年阜阳市食品安全风险监测结果,了解市售食品中食源性致病菌的污染情况,进行食品安全风险评估和预警,为制定有效的监管措施提供依据。方法选择阜阳市7个县市区食品流通和餐饮服务环节进行随机抽样,共采集10类350份样品,按国标GB 4789和食源性致病菌监测手册的方法进行监测,统计监测数据,并按照国家卫生标准和食品监测要求进行卫生学评价。结果食品中致病菌的检出率为10.57%(37/350)。10类食品中,蜡样芽孢杆菌的检出率最高,为30.3%(20/66);沙门菌的检出率最低,为0.91%(3/330)。不同包装和不同产地的食品中食源性致病菌的检出率差异有统计学意义。结论阜阳市食品中食源性致病菌污染率较高,婴幼儿食品、乳及乳制品、速冻米面食品、熟肉制品为主要受污染的食品。相关部门应加强对市售食品的监督管理,采取有针对性的控制措施,以减少可能引起食源性疾病的危险因素。 Objective To analyze the monitoring results of food safety risks in Fuyang City in 2013 to understand the contamination of food-borne pathogens in commercial foods, evaluate and alert the risks of food safety and provide the basis for effective regulatory measures. Methods A total of 350 samples of 10 types of food were collected from 7 counties in Fuyang City. Food samples of 350 samples were collected and monitored according to the national standard GB 4789 and foodborne pathogens monitoring manual. The monitoring data were collected and analyzed according to National hygiene standards and food safety monitoring requirements for health evaluation. Results The detection rate of pathogenic bacteria in food was 10.57% (37/350). Among 10 kinds of food, the highest detection rate of Bacillus cereus was 30.3% (20/66), while the lowest detection rate of Salmonella was 0.91% (3/330). The detection rates of food-borne pathogens in different packaging and food of different origin were statistically different. Conclusion The food-borne pathogens in Fuyang City have a high pollution rate. Food, milk and dairy products for infants and children, frozen rice noodles and cooked meats are the main contaminated foods. Relevant departments should strengthen the supervision and management of commercially available foods and take targeted control measures to reduce the risk factors that may cause foodborne diseases.
