采用溶剂萃取法和气相色谱-质谱联用技术(GC-MS),分别对红景天药曲发酵紫薯酒和纯米曲发酵紫薯酒的香气成分进行了分析、鉴定与比较。结果表明,在药曲紫薯酒和纯米曲紫薯酒中,分别鉴定出43种和31种香气成分,其含量分别占香气总量的97.83%和92.95%。纯米曲紫薯酒的主要香气物质为苯乙醇(39.53%)、异戊醇(9.79%)、己酸乙酯(5.17%)、乙酸苯乙酯(4.96%);药曲紫薯酒中的主要香气物质,除以上几种之外还包括辛酸异戊酯(5.74%)、辛酸乙酯(10.26%)等。药曲对紫薯酒中香气物质的形成有一定的促进作用。
The aroma components of purple fermented sweet potato wine and pure fermented purple sweet potato wine of Rhodiola rosea were analyzed, identified and compared respectively by solvent extraction and gas chromatography-mass spectrometry (GC-MS). The results showed that 43 kinds and 31 kinds of aroma components were identified respectively in the purple sweet potato wine and the pure rice purple sweet potato wine, accounting for 97.83% and 92.95% of the total aroma respectively. The main aroma components of pure rice purple sweet potato wine were phenylethanol (39.53%), isoamyl alcohol (9.79%), ethyl caproate (5.17%) and phenylacetate (4.96% The main aroma substances, in addition to the above also includes isoamyl caprylate (5.74%), ethyl caprylate (10.26%) and so on. Medicine song purple sweet potato wine in the formation of aroma substances have a certain role in promoting.
