饮食业在第三产业中占有重要位置。为了发展饮食业,各饮食企业要积极开展竞争。笔者觉得有几种竞争方法尤应引起注意。一、优质竞争法。随着人民生活水平的日益提高,生活方式已由温饱形趋向享受型,对吃的质量求要越来越高。对于菜肴、点心,不但要求价格适中,而且还讲究色、香、味、形、器。有些顾客对各菜、名点、名特产品尤其仰慕,即使在价格上贵一些,他们也会不借“重金”上门品尝或求购。在对外开放和旅游业发达的地区,发展名特菜肴、点心尤受欢迎。如到黄桥啃两块黄桥烧饼,到扬州啖一笼富春包子,到南京尝一尝金陵鸭馔,到淮安摆一桌“长鱼席”,当为旅游之快事。因此,饮食业恢复宣统名点名菜,光大百年老店是有意义的。

For dishes, dim sum, not only requires moderate prices, but also pay attention to color, smell, taste, shape, device. Some customers are particularly admired for their dishes, famous spots and specialties. Even if the prices are more expensive, they will not taste or buy with “big money”. In the opening up and tourism developed areas, the development of special dishes, snacks are particularly welcome. If Huangqiao eat two Huangqiao sesame seed cake, go to Yangzhou, a basket of Fuchun buns, to taste a Jinling duck dishes in Nanjing, to Huai’an put a table, “a long fish mat,” when the travel is fast. Therefore, the catering industry to resume Xuan Dian famous dishes, Everbright century-old shop is meaningful.
