研究羧甲基纤维素(CMC)含量对大豆分离蛋白(SPI)复合包装材料光学性质、机械性能、气体阻隔性能的影响,并对其结构进行分析。研究结果表明,添加CMC可显著提高SPI复合材料的抗拉强度和氧气阻隔能力,降低复合材料的断裂伸展率和透光性;当SPI与CMC含量为1∶1时,复合材料水蒸气透过率最低;通过傅里叶红外光谱推测复合材料中SPI和CMC主要是通过分子间氢键相结合,从而提高了SPI复合材料的抗拉强度和阻隔能力。
The effects of carboxymethylcellulose (CMC) content on the optical properties, mechanical properties and gas barrier properties of SPI packaging materials were studied and their structures were analyzed. The results showed that the addition of CMC can significantly improve the tensile strength and oxygen barrier properties of SPI composites, and reduce the elongation at break and light transmittance of the composites. When the content of SPI and CMC is 1: 1, the water vapor transmission through the composites The lowest rate was observed by Fourier transform infrared (FTIR) spectroscopy. It was speculated that the SPI and CMC in the composites were mainly combined by intermolecular hydrogen bonding to improve the tensile strength and barrier ability of SPI composites.
