荞麦,又名乌麦、甜荞、花荞、荞子等,属蓼科一年生草本植物,原产亚洲中部和北部,我国栽培较少,以黑龙江、吉林最多。荞麦米由荞麦的种子经脱皮而成,含70%的淀粉,10%~15%的蛋白质,2%~3%的脂肪,10%~16%的纤维素。还含有丰富的氨基酸,柠檬酸,苹果酸,维生素A、B1、B2、C、E,芦丁,以及矿物质硒、锌、镁、铜、钙、钾、铁、磷等。
