Niigata Prefecture, located on the shores of the Sea of Japan, is Japan’s largest rice producing area. In recent years, Niigata Prefecture has made great efforts to develop disaster relief food industries based on the advantages of abundant raw materials and developed food processing industry, contributing to Japan’s assurance of food supply in the event of a disaster. After the Great Hanshin Earthquake in 1995, there was a dilemma of inability to fully supply food.
