草菇是一种肉嫩味美、营养丰富的真菌。是国际市场上的热门货,供不应求。现将其加工技术简介如下。 一、工艺流程 鲜菇验收—修整—预煮—冷却—漂洗—挑选分级—装罐—加汤汁—排气密封—杀菌冷却—培养检验。 二、操作要求 1、原料验收 必须严格按鲜菇等级标准进行验收,标明级别,分别装放在干净的容器中。 2、修整 剔除杂物、开伞、破头等不合格的菇。菇根基部用小刀将泥砂、草屑等清除干净,修削面要保持整齐光滑,然后用清水漂洗干净。
