传统松花蛋是鲜鸭蛋在含氧化铅的碱性辅料作用下,通过一系列化学变化而制成。铅是对人体有害的重金属元素,不宜食用。为此,我们研制了新配方,此配方含 MA、NB,MA,NB 中的 M、N 与氧化铅的作用性能相似,但对人体无害有益;用此配方所泡制的松花蛋,不但各项指标符合国家规定标准,铅未检出,而且味、色、香、形与传统松花蛋相比无异。
