目的:研究麦胚多肽的抗氧化作用及其量效关系,确定麦胚抗氧化肽的分子质量范围。方法:采用体外生物模型,通过测定其中丙二醛(MDA)的含量,反映麦胚多肽对其脂质过氧化的抑制作用。结果:各分子段的麦胚多肽对MDA的产生具有明显的抑制作用,且量效关系与BHT、VC相似;通过分离纯化,获得抗氧化性能较高的峰组分F3和F4,当其质量浓度为2mg/mL时,对脂质过氧化的抑制率分别为50.26%和52.05%;通过标定,峰组分F3和F4的相对分子质量介于307和1450之间。结论:麦胚多肽具有较强的抗氧化能力。
Objective: To study the antioxidant effect of wheat germ polypeptide and its dose-response relationship, and to determine the molecular weight range of wheat germ anti-oxidative peptide. Methods: The in vitro biological model was used to determine the content of malondialdehyde (MDA), which could reflect the inhibitory effect of wheat germ polypeptide on its lipid peroxidation. Results: The wheat germ polypeptides of each molecular segment had a significant inhibitory effect on the production of MDA, and the dose-response relationship was similar to that of BHT and VC. The peak components F3 and F4 with higher antioxidant activity were obtained by separation and purification. At 2 mg / mL, the inhibitory rates of lipid peroxidation were 50.26% and 52.05%, respectively. The relative molecular masses of peak components F3 and F4 were between 307 and 1450 by calibration. Conclusion: Wheat germ polypeptide has a strong antioxidant capacity.
