本研究对8种不同婴幼儿食品中以不同化学状态存在的铁进行了定量的分析,其中包括总铁、可溶性铁、不溶性铁、可溶性复合铁、离子化铁、二价铁及三价铁。结果表明,总铁含量为0.206~0.422mmol/100g,其中可溶性铁所占的比例较低,约10%左右,认为相对较高的pH值及VC含量较低是这一结果的主要原因。对于不同的食品,其它化学状态铁所占的比例有所不同。建议食品生产厂家在生产铁强化食品时应充分考虑这些因素。
The present study quantitatively analyzed the presence of iron in different chemical states in eight different infant and young child foods, including total iron, soluble iron, insoluble iron, soluble complex iron, ionized iron, ferrous iron and ferric iron. The results show that the total iron content is 0.206 ~ 0.422mmol / 100g, of which the proportion of soluble iron is relatively low, about 10%, that the relatively high pH and VC content is the main result of this the reason. For different foods, the proportion of other chemical state of iron is different. Recommended food manufacturers in the production of iron fortified foods should take full account of these factors.
