中国酒究竟起源于何时虽无定论,但酿酒技术在我国发明很早却是为近代考古所证明的事实:从龙山文化遗存中保留的大量的尊、(?)、盉等专用于酿酒和饮酒的海制器皿可以推知,远在五千年左右,我国人民已开始用谷物酿酒了.《世本》所说“仪狄始作酒醪”、“少康作秫酒”,这不过是指夏禹之时已有了更为甘美浓烈的白酒罢了.据说夏禹很厌恶仪狄,认为后世必将有因酒而亡其国者,可见酗酒在那时已是贵族们的一种恶习.
