研究中国特有樱桃属野生果树欧李(Cerasus Humilis)鲜果香气的化学成分。采用顶空-固相微萃取和气-质联用技术对其进行分离、测定,结合计算机检索技术鉴定分离的化合物,并根据面积归一法测定各成分的相对含量。试验结果表明,共鉴定出77个香气化学成分,占色谱流出组分总量的99.76%,主要为2-己烯醇(13.83%)、2-己烯醛(9.62%)、苯甲醛(6.88%)、3-己烯醇(6.57%)、乙酸乙酯(6.38%)、己醛(5.15%)、里哪醇(5.05%)、己醇(4.12%)、己酸(3.57%)、乙酸丁酯(3.03%)等成分。为欧李果实的加工、利用提供了科学依据。
To study the chemical constituents of the fresh fruit aroma of the Chinese cherry tree, the fruit of Cerasus Humilis. The compounds were isolated and determined by headspace-solid phase microextraction and gas chromatography-mass spectrometry (GC-MS / MS), and the compounds were identified by computerized retrieval. The relative content of each component was determined by area normalization. The results showed that 77 aroma chemical constituents were identified, accounting for 99.76% of the total chromatographic effluent components, including 2-hexenol (13.83%), 2-hexenal (9.62%), benzaldehyde (6.57%), ethyl acetate (6.38%), hexanal (5.15%), linalool (5.05%), hexanol (4.12%), hexanoic acid Butyl acetate (3.03%) and other ingredients.
