在江苏省东台市,有一种小吃东台鱼汤面驰名大江南北,本地人家家会做、人人爱吃。东台鱼汤面源于清乾隆三十三年(公元1768年),已有200多年的历史了。相传,清乾隆年间,一位御膳厨师因触犯了御膳房的条规,被逐出宫廷,流落到东台盐区,以挑馄饨担子为生。当时,馄饨皆为肉馅。他初来乍到,人生地不熟,生意清淡,不由得想起御厨面点,便萌生了试做鱼汤面的念头。几经试验,虽然他做出的鱼汤色如牛奶,但总有腥味,且浓度不够。
