60年代初期以来,欧洲经济共同体由于小麦单位面积产量的持续增长,年产量超过5000万吨,目前每公顷平均4.5吨.这样的高产是通过育种与栽培措施得来的.通常每公顷冬小麦的产量大约比春小麦高1吨.此外,由于栽培措施的改进,蛋白质含量约增加到13%(以干重为基础),而且面包用小麦的比例也有所增加.在德意志联邦共和国,大部分高产小麦为软粒小麦,而且大多数用于制面包的A级小麦的硬度较制面包潜力低的B与C级小麦的硬度大.
