目的:了解深圳市福田区食品中各类食物中铝含量,并评估居民铝的暴露量情况,为今后开展监管工作提供依据。方法:2010年-2011年从辖区采集市售粮食、蔬菜等13类食品共311份,按照国家标准方法检测食品中铝的含量。根据2002年居民膳食营养调查中食物的摄入量,结合食物中铝含量的结果,进行食品中铝的暴露量评估。结果:部分面制食品中的铝含量超标较严重,居民每日通过日常食物摄入的铝量为13.4mg,比WHO/FAO的ADI值(60mg/d)低。结论:目前居民食品中铝的摄入量是安全的,但需要加强面制食品的监督管理,以保护消费者身体健康。
Objective: To understand the content of aluminum in food in Futian District, Shenzhen, and to assess the exposure of residents to aluminum, providing the basis for future regulatory work. Methods: From 2010 to 2011, 311 samples of 13 kinds of food such as grain and vegetables were collected from the area. The content of aluminum in food was tested according to the national standard method. According to the 2002 dietary intake of residents in the food intake, combined with the results of aluminum content in food, food aluminum exposure assessment. Results: The content of aluminum in some of the pasta products exceeded the standard seriously. The daily intake of aluminum by residents was 13.4 mg, which was lower than that of WHO / FAO (60 mg / d).
