强化食品就是利用某些营养素作为强化剂,通过食品加工方法,将含量不足或缺乏的营养素添加到食品中去,以增加其营养成份,提高其营养价值,满足人体各种营养素的需要。这种经人工添加营养素的食品,称为强化食品,所添加的营养素称为强化剂。食品强化的目的在于弥补天然食品的缺陷及不足,补充食品加工、贮存、运输过程中的损失,提高食品的营养生理价值,以满足特殊需要和获得营养平衡,提高利用率。
