本文报告用贫血大鼠血红蛋白恢复实验,用“点式法”和“斜率法”对发芽大豆铁的生物利用率进行了评价。结果表明:贫血大鼠经4周恢复实验后,FesO_4组与大豆发芽3天组血红蛋白浓度恢复到正常水平,而大豆粉组仍处于轻度贫血状态,大豆发芽5天组也未恢复到正常水平。“斜率法”所得铁的相对生物利用率为:FeSO_4组100％,大豆粉组68.7％,发芽3天组88.6％,发芽5天组62.1％。
This article reports hemoglobin recovery experiments in anemic rats and evaluates the bioavailability of iron in germinated soybeans using the “spot method” and “slope method”. The results showed that the hemoglobin concentration of FesO_4 group and soybean sprouting three days group returned to normal level after 4 weeks recovery test in anemic rats, while the soybean powder group was still in mild anemia state, and the soybean sprouting 5 days group did not return to normal level . The relative bioavailability of iron obtained from the Slope Method was 100% in the FeSO 4 group, 68.7% in the soybean flour group, 88.6% in the 3-day germination group and 62.1% in the 5-day germination group.
