Protein engineer Jasper Akerboom left his research fellow at the Jeannea Farm Research Park at the Howard Hughes Medical Institute in Virginia to pursue his career as a brewer. In this interview (for the sake of conciseness and clarity, the article edited the interview), Akerboom explored the experience at the Jennelia Farm, yeast, and the cause of happiness following microbes. Q: What brought you to Janelle Farm? A: When I was studying for a doctorate in microbiology at the University of Wageningen in the Netherlands, I focused on the extreme living and living organisms living in very hot places.
