目的了解甘肃省地方特色食品中食源性致病菌的污染状况,为食源性疾病控制提供科学依据。方法各市州每月采集地方特色食品2份~3份,全年共采集地方特色食品439份,依据中华人民共和国国家标准《食品卫生微生物学检验》(GB/T4789)规定的程序和方法检测分离致病菌。结果 439份样品中,19份检出食源性致病菌,总检出率为4.33%;平凉市检出率最高(15.15%);发酵类地方特色食品中食源性致病菌的检出率最高,为16.67%;饭店(酒店)样本中污染最为严重(15.38%);各季度间食源性致病菌的检出率差异无统计学意义。结论甘肃省地方特色食品中食源性致病菌污染现状不容乐观,应引起有关部门和消费者的重视。
Objective To understand the status of food-borne pathogens in Gansu Province and to provide a scientific basis for foodborne disease control. Methods The cities and prefectures collected 2 ~ 3 local specialties each month, and 439 local specialties were collected in the whole year. The detection and separation were conducted according to the procedures and methods stipulated by the National Standard of Food Hygiene Microbiology (GB / T4789) of the People’s Republic of China Pathogenic bacteria. Results Among the 439 samples, 19 were detected as food-borne pathogens with a total detection rate of 4.33%; the highest detection rate was found in Pingliang (15.15%); the detection of food-borne pathogenic bacteria The highest rate was 16.67%. The most polluted samples were found in hotels (hotels) (15.38%). There was no significant difference in the detection rate of food-borne pathogens between the three quarters. Conclusion The status quo of food-borne pathogenic bacteria in local specialties in Gansu Province is not optimistic, which should be paid more attention by relevant departments and consumers.
