目的了解甘肃省武威市食品中沙门氏菌、金黄色葡萄球菌、单核细胞增生李斯特菌、蜡样芽孢杆菌、志贺氏菌和肠出血性大肠埃希氏菌(EHEC)O157∶H7的污染状况,确定可能污染上述致病菌的高危食品,为食源性疾病监测提供科学依据。方法按《食源性致病菌监测工作手册》和中华人民共和国国家标准《食品卫生微生物学检验》GB/T4789-2003规定的程序和方法检测并分离致病菌。结果检测11类样品共1 739份,检出致病菌174株,总检出率10.00%,蜡样芽孢杆菌检出率最高9.53%,11类食品中肉与肉制品污染最为严重、阳性率14.88%。结论武威市食品中存在不同程度的食源性致病菌污染,其中肉与肉制品是主要受污染的食品品种,食品安全监管部门应加强食品安全监督管理。
Objective To understand the contamination status of Salmonella, Staphylococcus aureus, Listeria monocytogenes, Bacillus cereus, Shigella and enterohemorrhagic Escherichia coli (EHEC) O157: H7 in Wuwei City, Gansu Province , Identify high-risk foods that may contaminate the pathogens mentioned above, and provide a scientific basis for monitoring food-borne diseases. Methods The pathogen was detected and isolated according to the procedures and methods stipulated in “Foodborne Pathogen Surveillance Workbook” and the People’s Republic of China National Standard “Food Hygiene Microbiological Test” GB / T4789-2003. Results A total of 1 739 samples of 11 kinds of samples were detected, of which 174 strains were detected, the total detection rate was 10.00%. The highest detection rate of Bacillus cereus was 9.53%. The meat and meat products in 11 kinds of foodstuffs were the most polluted. The positive rate 14.88%. Conclusion There are different degrees of food-borne pathogens contamination in food in Wuwei City. Among them, meat and meat products are the main contaminated food varieties, and food safety regulatory authorities should strengthen food safety supervision and management.
