目的通过对沈阳市食源性致病菌的主动监测,分析市售食品中食源性致病菌污染状况及分布。方法据国家CDC《食源性致病菌工作手册》食品安全国家标准GB4789系列,2011—2013年在沈阳市的大型超市、农贸市场、餐饮店和专卖店等采集食品检测致病菌。结果 2011年共检204份样品776项次,致病菌检出率5.4%;2012年共检240份样品830项次,致病菌检出率10.0%;2013年共检370份样品1010项次,致病菌检出率8.7%。3年共检814份样品,检出67株致病菌,总检出率8.2%,其中沙门菌3株、副溶血性弧菌19株、金黄色葡萄球菌22株、蜡样芽胞杆菌13株、单增李斯特氏菌9株、志贺氏菌1株。结论通过对市售食品中食源性致病菌主动监测,掌握污染状况,及时发现食品安全隐患,为开展食品安全风险评估、制定食品安全标准和采取有针对性的控制措施提供依据。
Objective Through the active monitoring of foodborne pathogens in Shenyang, the status and distribution of foodborne pathogens in commercial products were analyzed. Methods According to the national CDC “Foodborne Pathogenic Bacteria Work Manual” GB4789 series of food safety standards, 2011-2013 in Shenyang City, supermarkets, farmers markets, restaurants and specialty stores to detect foodborne pathogens. Results A total of 204 samples were detected in 776 batches in 2011, with a detection rate of 5.4% for pathogens. In 2012, a total of 240 samples were collected for 830 batches with a detection rate of 10.0%. In 2013, a total of 370 samples Times, the detection rate of pathogens 8.7%. A total of 814 samples were detected in 3 years, and 67 pathogens were detected with a total detection rate of 8.2%. Among them, 3 were Salmonella, 19 strains were Vibrio parahaemolyticus, 22 were Staphylococcus aureus, 13 were Bacillus cereus 9 strains of Listeria monocytogenes and 1 strain of Shigella. Conclusion Through the active monitoring of food-borne pathogens in commercial products, grasping the pollution status and discovering the hidden dangers of food safety in time, it provides the basis for carrying out food safety risk assessment, establishing food safety standards and adopting targeted control measures.
