随着软饮料工业的快速发展和膳食结构的变化,人们对软饮料的消费量愈来愈大,尤其是果汁、菜汁以其较高的营养价值和优美的色香味备受人们的青睐。蔬菜富含多种维生素、矿物质、纤维素等营养成分,人体所需的大量营养素主要靠蔬菜提供,但有些蔬菜往往具有特殊的、令人不愉快的味道,这直接影响到了蔬菜作为软饮料原料的利用。为消除蔬菜不良风味的影响,我们采取了组合掩盖法,利用风味浓厚的山楂和多种蔬菜制成复合果菜汁,取得了良好效果。该纯天然果菜汁不但营养素全面,富含多种维生素,营养价值高,而且色香味均佳,酸甜适口。现将研制程序介绍如下:
With the rapid development of the soft drink industry and the change of dietary structure, the consumption of soft drinks is getting larger and larger, especially fruit juice and vegetable juice are favored by their higher nutritional value and beautiful color and fragrance. Vegetables are rich in vitamins, minerals, cellulose and other nutrients, the body needs a large number of nutrients mainly by vegetables, but some vegetables tend to have a special, unpleasant taste, which directly affects the vegetables as a soft drink raw materials use. To eliminate the bad flavor of vegetables, we adopted a combination of cover-up method, the use of strong flavor of hawthorn and a variety of vegetables made of composite fruit juice, and achieved good results.
