目的了解丰泽区集中式餐饮具消毒企业提供的餐饮具的消毒效果。方法按GB 14934-1994《食(饮)具消毒卫生标准》大肠菌群快速检验纸片法进行大肠菌群检测,将结果与2008-2010年非集中消毒餐饮具消毒监测结果进行比较。结果 2008-2010年共采集集中消毒餐饮具561份,各年度合格率类似;集中消毒餐饮具总合格率(82.9%)高于非集中消毒餐饮具(58.2%);在消毒企业与在餐饮单位采集的集中消毒餐饮具消毒效果差异无统计学意义。结论丰泽区集中消毒餐饮具消毒效果优于餐饮店自行洗消餐饮具,但离合格率100%还有很大差距,卫生部门应加大监督管理。
Objective To understand the disinfection effect of tableware provided by the centralized tableware disinfection enterprises in Fengze District. Methods According to GB 14934-1994 Standard for Disinfection and Hygienic Standard of Food and Beverage, coliform bacteria were tested by the method of rapid test of coliform bacteria, and the results were compared with the results of disinfection monitoring of non-concentrated disinfection tableware in 2008-2010. Results A total of 561 concentrated drinking tableware were collected during 2008-2010, with a similar passing rate in each year. The total pass rate of concentrated sterilization tableware (82.9%) was higher than that of non-concentrated tableware (58.2%). In disinfection enterprises and catering units Collection of concentrated disinfection tableware disinfection effect was no significant difference. Conclusion Fengze District disinfection tableware disinfection better than the restaurant self-cleaning tableware, but the passing rate of 100% there is a big gap between the health sector should increase supervision and management.
