豆豉,是大豆经过蒸煮发酵制成的美味食品。优质的豆豉不仅是家常菜肴、调味佐料,而且也是对人体健康有益的营养佳品。 忆往昔,我国早在距今2200年前的西汉时期,豆豉便已像鸡鱼肉蛋一样成为畅销美食了。《汉书·食货志》中写道:“长安樊少翁卖豆豉,号豆豉樊是也。”说的是西汉京城长安(今西安市)有位叫樊少翁的人,以贩豆豉谋利,人们给他取了一个“豆豉樊”的绰号。
