根据可溶性糖易溶于C2H5OH水溶液、淀粉不溶于C2H5OH水溶液在稀HCl中能转化为可溶性糖、可溶性糖在稀HCl中可全部转化为还原糖、还原糖在碱性溶液中能将K3Fe(CN)6还原为K4Fe(CN)6的原理,采用全量测总糖、去可溶性糖样品测淀粉的方法,研究出了一次快速而准确地测定栗实可溶性糖及淀粉含量的方法。
According to the solubility of soluble sugar in C2H5OH aqueous solution, starch insoluble in C2H5OH aqueous solution can be converted into soluble sugar in dilute HCl, soluble sugar in diluted HCl can be fully converted to reducing sugar, reducing sugar in alkaline solution K3Fe (CN) 6 was reduced to K4Fe (CN) 6. The method of measuring total soluble sugar and starch with soluble sugar was developed. A rapid and accurate method was established to determine the content of soluble sugar and starch in chestnut.
