把猪、牛和羊肉充分捣碎,加固体混合催化剂(K_2SO_4∶CuSO_4·5H_2O=10∶1)和浓硫酸进行消化。消化液用氨气敏电极采取标准添加法测定氨氮,计算出样品中的蛋白质含量。同时用经典的Kjeldahl法测定蛋白质含量,两种方法测定结果的统计分析无显著差异。由此可见,用标准添加法测定肉中的氮是可靠的,而且它只需要一种标准溶液,操作简便、快速,适合于大批样品的分析使用。
The pigs, cattle and mutton were fully mashed, solid mixed catalyst (K_2SO_4:CuSO_4 · 5H_2O = 10: 1) and concentrated sulfuric acid were digested. Digestion with ammonia gas sensing electrode to determine the standard method of adding ammonia to calculate the sample protein content. At the same time using the classic Kjeldahl method for the determination of protein content, the two methods for the determination of statistical analysis showed no significant difference. Thus, the standard method of adding nitrogen determination of meat is reliable, and it only requires a standard solution, easy to operate, fast, suitable for a large number of samples for analysis and use.
