孜然芹(Cuminum yminum L)俗称孜然,属伞形科,孜然芹属,二年生或五年生草本,在本属中仅有2个种,我国有1个种,主要在新疆栽培,当地维吾尔族、回族、哈萨克族等各族群众将其果实研成粉末作调料,尤其常用于烧烤肉食中。其果实也可人药,治疗消化不良和胃寒腹痛等症。由于孜然芹香味浓厚而独特,深受北方人的喜爱,成为北方群众生活中的一种重要食品佐料。很多南方人对孜然芹的独特香料也颇感兴趣,因此近年来对孜然芹需求量逐年增多,种植面积逐年扩大,经营活
Cuminum yumum L., commonly known as cumin, belongs to the family Umbrella, Cuminum genus, biennial or perennial herb. There are only 2 species in this genus, and 1 species in China, mainly cultivated in Xinjiang. Local Uygur, Hui, Kazak and other ethnic groups of their fruits into powder for seasoning, especially in the barbecue meat.
